Teriyaki salmon is a healthy staple for lunch of dinner
Many people try to get more fish into their diets, and wild caught salmon is one of the best, providing heart-healthy omega-3 oil.
Teriyaki salmon is a classic dish and easy to make. Teriyaki is a glazing sauce commonly used in Japanese cooking. Although you could buy premade teriyaki glaze, why not try this recipe from Chef Sean Force of Ocean Prime? These include recipes for the glaze, as well as garnish veggies and a bahn mi marinade for them. Although bahn mi refers to baguettes used in Vietnamese sandwiches commonly sold as street food, here we deal only with the marinade, used to season the vegetable garnish.
Marinate the fish first, then create the garnish.
Makes 1 gallon
• 1 pound of brown sugar
• 24 ounces of pineapple juice
• 3 ounces of ginger root
• 3 ounces of garlic, peeled and smashed
• 6 cups of light soy sauce
• 4 cups of water
Combine all ingredients in a medium stock pot and bring to a boil. Remove from heat, and cool to room temperature. Label, date and refrigerate.
Makes 2 quarts
• 1 gallon teriyaki marinade
• 4 cups of sugar
• 4 ounces of ginger root
Combine all ingredients in a large sauce pan. Bring to a boil, then simmer until the volume is reduced to half. Stain through a chinois. Cool, label, date and refrigerate.
Teriyaki Marinated Salmon
Make: eight 8-ounce filets
• 8 8-ounce cuts of salmon
• 4 cups of Teriyaki Marinade
For each filet:
• 1 tablespoon teriyaki glaze
• 1 pinch of salt
• 3 ounces of sushi rice
• 1 ounce shiitake mushroom, julienned, sautéed
• 5 ounces Bahn Mi veg garnish (recipe below)
• 1 tablespoon Banh Mi Marinade
• 1 teaspoon sesame seeds
Marinate salmon in teriyaki marinade for one hour. Remove from marinade and lay on parchment-lined sheet trays. Hold in refrigerator.
Meanwhile, cook the sushi rice, sautée the mushrooms and set aside, then make the vegetable garnish and set aside.
Season salmon with salt and sear until golden brown.
Brush with glaze and finish salmon in a 350F oven for about 5 minutes.
To plate, place a WHAT SIZE? ring mold in a room temperature bowl and press rice into mold. Flip mold onto plate, remove mold. Top rice with shiitake mushrooms, then drizzle half of the soy sauce on mushrooms and around rice with remaining sauce.
Place salmon on top of mushrooms.
Toss vegetable garnish in Banh Mi Marinade and season with salt.
Top salmon with vegetable garnish, and sprinkle with sesame seeds.
Makes 8 ounces
• 2 ounces of pepper, red bell, ribs removed and fine julienne
• 2 ounces of carrots, fine julienne
• 2 ounces of snap peas, fine julienne
• 2 ounces of bean sprouts
• 6 cilantro leaves
Julienne red peppers, carrots and snap peas. Combine with sprouts and cilantro leaves. Refrigerate until ready to serve.
Banh Mi Marinade
• 3 1/3 cups of light soy sauce
• 13 cloves of garlic
• 3.5 ounces of granulated sugar
• 1 1/2 teaspoons of black pepper
• juice of 7 limes
• 3 1/3 teaspoons Chinese five spice blend
• 6 tablespoons of fish sauce
Combine all ingredients with a whisk in a mixing bowl. Label, date and refrigerate.
